How to make Chicken Biryani 2021

Biryani is a traditional Indian dish of South Asia, which is made with rice and meat or vegetables. Chicken biryani is one of the most popular rice dishes often served in weddings, dinner parties, potlucks and any other get-together. There are many different ways to make Chicken Biryani but this article describes the recipe for Chicken Biryani using Chicken thighs/ Chicken Kofta. When I wanted to learn how to make Chicken Biryani , I have tried many recipes on internet, some are good while some are not so good. That’s the reason I am writing this detailed article on Chicken Biryani by describing my own experience after making it couple times.

Ingredients for Chicken Biryani Recipe:

Chicken Thighs – 500 gms Onions – 2 large sliced thinly Ginger Garlic Paste – 1 tbsp Chicken Dry Spices: Bay Leaves – 2 Cinnamon Stick – 1 inch True Cinnamon (Ceylon Cinnamon) – 1 small piece Green Cardamom – 4-5 nos Cloves – 3-4 nos Mace / Javetri – a pinch Chicken Gravy Spices: Coriander Seeds Powder -1 tbsp Red Chili Powder – 1 tbsp Turmeric Powder – ½ tsp Biryani Masala Powder – 1 & ½ tbsp Mint & Coriander leaves Paste – ¾ cup Ghee or Oil for frying rice.

Basmati Rice – 2 cups Water as needed Salt as per taste Oil as required For Chicken Kofta: Chicken Mince – 500 gms Finely chopped onion – 1 medium sized Ginger & Garlic paste – 2 tsp Green Chilies – 3-4 nos Bread Crumbs as required Coriander leaves as required Salt as per taste Oil to shallow fry Chicken Kofta Method: Thoroughly mix all the ingredients mentioned for Chicken Kofta and then divide into 25 equal portions.

Make them into round balls or flat tikkis or any desired shape you want. Heat a pan, add oil and heat till it becomes smoking hot. Gently lower Chicken Kofta pieces in the hot oil one by one and fry until they turn golden brown from both sides. Remove them using a slotted spoon and place on absorbent kitchen towels till excess oil is absorbed. Chicken Biryani Preparation: Wash rice couple of times until water runs clear. Soak the rice in water for 30 minutes. Strain and keep aside.

Chicken Biryani

Prepare Chicken Kofta by shallow frying them on a non-stick pan till they are evenly golden brown on all sides. Remove onto an absorbent paper towel to soak up any excess oil. Set aside Chicken thighs / Chicken Koftas along with Chicken dry spices, Chicken gravy spices, Ginger Garlic paste , mint & coriander leaves paste , fried onions, green chilies and Chicken koftas into separate bowls. Heat Oil or Ghee in a deep bottomed vessel . When the oil becomes hot enough, lower the flame and add Chicken mince mixture and sauté for a couple of minutes on medium heat. Add Chicken dry spices, Ginger Garlic paste , mint & coriander leaves paste , fried onions, green chilies and Chicken koftas into separate bowls.

When Chicken mince mixture is cooked well, add Chicken gravy spices and sauté for another 2-3 minutes on low flame. Now switch off the gas stove. Add soaked rice along with Chicken gravy / Chicken kofta masala. Gently mix everything together carefully, without disturbing the grains of rice too much. Take a deep vessel in which you will be making Chicken biryani . Grease it lightly with oil or ghee all over the inner surface before placing half of the above mixture. Place a Chicken kofta on the rice and spread some Chicken biryani gravy / Chicken kofta masala all over it. Sprinkle fried onions, mint & coriander leaves and Chicken dry spices as per your choice. Repeat the layers of rice, Chicken koftas , Chicken Biryani gravy / Chicken kofta masala, mint & coriander leaves and Chicken dry spices . Top this layer with a little oil or ghee .

Cover tightly with an aluminum foil or a moist cloth to seal the vessel tightly. Then cover with a lid of desired size. If you are using a heavy bottomed vessel then place it directly over low flame without covering it to prevent any burning smell from spreading in your kitchen. Cooking Chicken Biryani : Now put the vessel over low flame. Let Chicken biryani cook for 20 minutes on low flame. Turn off gas stove and let Chicken biryani rest for another 10-15 minutes without opening the lid. Open the lid carefully, Chicken biryani is ready to be served. Chicken Biryani is ready to serve with Chicken Kofta Curry, Onion Raita , chicken pakoda or raita . Enjoy !
