If you haven’t heard, today is National Chicken Wrap Day. So get up and go get one of these awesome wraps at your local fast food joint because it’s free! Besides that there are other reasons to eat chicken wraps on this hallowed day.
Chicken wraps
They are tasty, portable, comforting, healthy (sometimes), and they can be quite easy to make if you don’t mind spending a few minutes in the kitchen.
This recipe is adapted from Tyler Florence’s “Real Kitchen”.
Ingredients:
1/4 cup reduced-fat mayonnaise
2 Tbsp sriracha hot chili sauce
several dashes fresh black pepper
1 tsp celery salt
4 (8-inch) flour tortillas
1 cup finely shredded cabbage or coleslaw mix
2 carrots, peeled and grated with a box grater
1/3 cup thinly sliced red onion
juice of 1 lime (about 2 Tbsp)
Combine the mayo, sriracha, black pepper and celery salt in a small bowl. The recipe calls for whole-grain tortillas but we just used what we had which were plain white tortillas.
Combine the vegetables and the mayo mixture in a large bowl and toss well to combine. Divide evenly among the tortillas and roll up into tight cylinders. Cut each wrap in half and serve immediately.
